Kiwi Salad - Burst of green




Freshness in a Bowl – Nourishing Salad


Ingredients:


• 1 cucumber, thinly sliced


• 2 kiwis, peeled and thinly sliced


• 1/3 cup walnuts, roughly chopped


• 1/3 cup mung bean sprouts


• 1/3 cup alfalfa sprouts


• 1 small shallot, thinly sliced


• Fresh mint leaves (for garnish)


• A sprinkle of dried or fresh dill


• Himalayan salt, to taste


Dressing:


• 2 tbsp olive oil


• 2 tbsp white balsamic vinegar or fresh lemon juice


• 1/2 tbsp mustard


• 1 tsp honey


• A pinch of Himalayan salt


Instructions:


1. In a large bowl, combine cucumber slices, kiwi slices, walnuts, mung bean sprouts, alfalfa sprouts, and shallots.


2. Lightly toss the ingredients together.


3. In a small bowl, whisk together olive oil, white balsamic vinegar (or lemon juice), mustard, honey, and a pinch of Himalayan salt until well emulsified.


4. Drizzle the dressing over the salad just before serving.


5. Garnish with fresh mint leaves and a sprinkle of dill.


6. Serve immediately and enjoy a burst of fresh, vibrant flavors!
